- 1 cup cherry tomatoes, quartered, or 2 Roma tomatoes, seeded and chopped
- Fresh corn from 1 ear of sweet corn
- 1/3 cup finely chopped red onion
- 1/2 red bell pepper, chopped
- 1 jalapeno pepper, diced, seeds optional
- 2 tablespoons finely chopped cilantro
- 1 garlic clove, minced, or 1/4 teaspoon garlic powder
- 2 tablespoons lime juice
- 1/4 teaspoon ground cumin
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
Instructions
- Marinate the chicken: In a small bowl, whisk together the olive oil, lime juice, lime zest, chili powder, brown sugar, salt, ground cumin, smoked paprika, onion powder, garlic powder, chipotle chili powder, and pepper. Coat the chicken evenly with this flavorful rub. Allow it to marinate for at least 30 minutes at room temperature, or refrigerate for up to 8 hours.
- Cook the chicken: For stovetop, heat a grill pan or skillet over medium-high heat, grease lightly. Cook the chicken for 3-5 minutes on one side. Flip, cover, and reduce heat to medium, cooking for another 5-7 minutes until done. Let it rest for 5 minutes.
- Grill the chicken: Preheat grill to medium heat (375-450°F). Grill chicken for 5-7 minutes on each side until cooked through. Let rest for 5 minutes.
- Prepare the avocado salsa: In a large bowl, combine cherry tomatoes, corn, red onion, red bell pepper, jalapeno, cilantro, minced garlic, lime juice, ground cumin, salt, and pepper. Chill to let flavors meld, then fold in avocados just before serving.
Notes
For best results, marinate the chicken longer for deeper flavors. Use pre-chopped veggies for quick prep or add fruits like mango for a unique salsa.
