  • 6g baking powder
  • 3g fine salt
  • 85g white chocolate (for frosting)
  • 60g heavy whipping cream (for frosting)
  • 226g unsalted butter
  • 8g vanilla extract or vanilla bean paste (for frosting)
  • 1g fine salt (for frosting)
  • 452g powdered sugar

Instructions

  1. Prepare the White Chocolate Mixture: In a microwave-safe bowl, combine 175g of white chocolate with 60g of heavy whipping cream. Heat in bursts of 30 seconds, stirring until smooth and velvety. Allow to cool slightly.
  2. Mix the Cupcake Batter: Whisk together sour cream, water, oil, egg, and vanilla extract until well combined. Gradually add cooled white chocolate mixture, mixing until smooth.
  3. Combine Dry Ingredients: In a separate bowl, sift together flour, granulated sugar, baking powder, and fine salt.
  4. Combine and Bake: Gently fold the dry ingredients into the wet mixture until just combined. Divide batter into cupcake liners and bake at 350°F (175°C) for 20-22 minutes. Allow to cool completely.
  5. Make the Frosting: Melt 85g of white chocolate with 60g of heavy cream and let cool. Beat unsalted butter until creamy, then mix in cooled chocolate mixture, vanilla extract, and salt. Gradually add powdered sugar until fluffy.
  6. Frost the Cupcakes: Once cool, frost with white chocolate buttercream and decorate as desired.
