Ingredients

  • 1 cup dark brown sugar, packed
  • 2 large eggs
  • 1 cup molasses
  • 1/2 cup hot water
  • 1 cup powdered sugar (for frosting)
  • 2 tablespoons unsalted butter, softened (for frosting)
  • 2 tablespoons milk (for frosting)
  • 1 teaspoon vanilla extract (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a 9-inch round cake pan by greasing and flouring it.
  2. Whisk together the flour, ground ginger, ground cinnamon, ground cloves, baking soda, and salt in a mixing bowl.
  3. Beat the softened butter and brown sugar until light and fluffy, then add the eggs one at a time and mix in the molasses.
  4. Incorporate the dry ingredients into the wet mixture, alternating with the hot water.
  5. Pour the batter into the prepared cake pan and bake for 30-35 minutes or until a toothpick comes out clean.
  6. Cool the cake in the pan for 10 minutes before transferring it to a wire rack to cool completely.
  7. Mix the powdered sugar, butter, milk, and vanilla extract for the frosting until smooth.
  8. Frost the cooled cake generously with the prepared frosting.

Notes

For a lighter version, substitute applesauce for some of the butter and consider using whole wheat flour.
