- 1 cup chopped pecans, toasted
- 1 (15.25 oz) yellow or butter cake mix
- 1 (3.4 oz) instant vanilla pudding mix
- 1/2 cup all-purpose flour
- 1 1/4 cup buttermilk
- 1/2 cup salted butter, melted
- 4 large eggs
- 1 (20 oz) can crushed pineapple (don’t drain)
- 1 cup granulated sugar
For Frosting:
- 2 (8 oz) packages cream cheese, softened
- 1/2 cup salted butter, softened
- 1 (16 oz) box powdered sugar
- 2 tsp pure vanilla extract
- Maraschino cherries for garnishing (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- Spread the pecans on a sheet pan in a single layer and toast them for 6-8 minutes, or until fragrant and lightly golden. Set aside to cool.
- Spray a 13×9-inch cake pan with baking spray and set it aside.
- In a large bowl, beat together the cake mix, pudding mix, flour, buttermilk, melted butter, and eggs until fully combined and smooth.
- Pour the batter evenly into the prepared pan.
- Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Use a fork to poke holes all over the top of the hot cake for maximum flavor absorption.
- Let it cool slightly while you prepare the pineapple topping. In a small saucepan, bring the crushed pineapple with its juices and 1/2 cup of sugar to a boil.
- Spoon the warm pineapple mixture evenly over the cake, allowing it to soak in as the cake cools completely in the pan.
- For frosting, cream together the softened cream cheese and butter until smooth. Add the powdered sugar one cup at a time, mixing well after each addition. Then, add the vanilla extract.
- Frost the top of the cooled cake generously and sprinkle with the toasted pecans.
- Chill the cake thoroughly in the refrigerator before serving. Optionally, adorn it with maraschino cherries for that classic touch.
