Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup powdered sugar
  • 1/2 cup unsalted butter, cold and cubed
  • 1 large egg yolk
  • 2 tbsp cold water
  • 1 1/2 cups heavy cream
  • 1/2 cup granulated sugar
  • 1 tsp vanilla extract
  • A few drops of pink food coloring
  • Fresh edible flowers or flower-shaped fondant decorations
  • Powdered sugar for dusting

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the flour and powdered sugar in a large bowl.
  3. Cut in the cold, cubed butter until the mixture resembles coarse crumbs.
  4. Add the egg yolk and cold water, mixing gently until a dough forms.
  5. Press the dough into a tart pan, covering both the base and sides evenly.
  6. Prick the base of the crust with a fork to prevent bubbling.
  7. Chill the crust in the refrigerator for 10 minutes.
  8. Bake the crust for 12-15 minutes or until golden brown.
  9. Remove the crust from the oven and let it cool completely.
  10. Whip the heavy cream with granulated sugar and vanilla until stiff peaks form.
  11. Mix in a few drops of pink food coloring, folding gently.
  12. Spoon the whipped filling into the cooled tart crust, spreading evenly.
  13. Decorate with fresh edible flowers or fondant.
  14. Dust with powdered sugar and chill for 2-3 hours.

Notes

For a flakier crust, ensure butter is very cold. Experiment with flavors like almond or lemon zest in the whipped cream.
