- 1 1/4 cups all-purpose flour
- 1/4 cup powdered sugar
- 1/2 cup unsalted butter, cold and cubed
- 1 egg yolk
- 2 tbsp ice water
- 1/2 cup shelled pistachios
- 1/4 cup heavy cream
- 1/4 cup powdered sugar
- 1 tsp vanilla extract
- 2 tbsp unsalted butter, softened
- 1/4 cup cherry jam or preserves
- Fresh cherries, pitted
- Crushed pistachios
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour mini tartlet pans.
- Combine the flour and powdered sugar in a food processor. Add the cold, cubed butter and pulse until it resembles coarse crumbs.
- Add the egg yolk and ice water, pulsing until the dough forms. It should hold together but not be sticky.
- Roll the dough into a ball, flatten it into a disk, wrap it in plastic wrap, and refrigerate for 30 minutes.
- Roll out the chilled dough on a floured surface, cut into circles, and press evenly into the pans. Bake for about 10-12 minutes until golden brown. Let cool completely.
- Pulse the shelled pistachios in a food processor until finely ground. Mix with heavy cream, powdered sugar, vanilla extract, and softened butter until smooth.
- Spread cherry jam into the base of each cooled tartlet.
- Pipe or spoon the pistachio filling over the jam, smoothing it out.
- Top each tartlet with fresh cherries and sprinkle with crushed pistachios.
Notes
For a gluten-free option, substitute almond flour for all-purpose flour. Use Greek yogurt instead of heavy cream for a lighter filling.
