Ingredients

  • 1 1/4 cups all-purpose flour
  • 1/4 cup powdered sugar
  • 1/2 cup unsalted butter, cold and cubed
  • 1 egg yolk
  • 2 tbsp ice water
  • 1/2 cup shelled pistachios
  • 1/4 cup heavy cream
  • 1/4 cup powdered sugar
  • 1 tsp vanilla extract
  • 2 tbsp unsalted butter, softened
  • 1/4 cup cherry jam or preserves
  • Fresh cherries, pitted
  • Crushed pistachios

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour mini tartlet pans.
  2. Combine the flour and powdered sugar in a food processor. Add the cold, cubed butter and pulse until it resembles coarse crumbs.
  3. Add the egg yolk and ice water, pulsing until the dough forms. It should hold together but not be sticky.
  4. Roll the dough into a ball, flatten it into a disk, wrap it in plastic wrap, and refrigerate for 30 minutes.
  5. Roll out the chilled dough on a floured surface, cut into circles, and press evenly into the pans. Bake for about 10-12 minutes until golden brown. Let cool completely.
  6. Pulse the shelled pistachios in a food processor until finely ground. Mix with heavy cream, powdered sugar, vanilla extract, and softened butter until smooth.
  7. Spread cherry jam into the base of each cooled tartlet.
  8. Pipe or spoon the pistachio filling over the jam, smoothing it out.
  9. Top each tartlet with fresh cherries and sprinkle with crushed pistachios.

Notes

For a gluten-free option, substitute almond flour for all-purpose flour. Use Greek yogurt instead of heavy cream for a lighter filling.
