- 2 cups graham cracker crumbs
- 1/2 cup melted butter
- 3 (8 oz) packages cream cheese, softened
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 3 large eggs
- 1/2 cup sour cream
- 1/2 cup heavy cream
- 1 cup cherry pie filling
- Fresh cherries (optional for garnish)
- Whipped cream (for topping)
Instructions
- Preheat your oven to 325°F (165°C).
- Grease a 9-inch springform pan and line the bottom with parchment paper.
- Combine the graham cracker crumbs and melted butter in a medium bowl.
- Press the crumb mixture into the bottom of the prepared springform pan.
- Bake for 10 minutes, then remove from the oven.
- Beat the softened cream cheese and granulated sugar together until smooth.
- Add the vanilla extract and eggs, one at a time, beating well after each addition.
- Stir in the sour cream and heavy cream until smooth.
- Pour the cheesecake filling over the cooled crust and smooth the top.
- Bake for 50-60 minutes, or until the center is set but slightly jiggly.
- Turn off the oven and let the cheesecake cool in the oven for 1 hour.
- Refrigerate for at least 4 hours or overnight.
- Top with cherry pie filling, fresh cherries, and whipped cream.
- Slice and serve chilled.
Notes
For best results, chill the cheesecake overnight to enhance the flavors.
