- 1 lb ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups frozen hash browns, thawed
- 1 can (10.5 oz) cream of mushroom soup
- 1 cup sour cream
- 1 cup shredded cheddar cheese
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- 1/4 cup green onions, chopped
Instructions
- Preheat your oven to 350°F (175°C).
- Grease a 9×13-inch baking dish.
- Add the ground beef to a skillet over medium heat and cook until browned, then drain excess fat.
- Add the chopped onion and minced garlic to the skillet and cook until the onion becomes translucent.
- Combine thawed hash browns, cream of mushroom soup, sour cream, half of the cheddar cheese, salt, pepper, and paprika in a large bowl.
- Incorporate the beef mixture into the potato medley.
- Spread the mixture evenly in the prepared baking dish and top with remaining cheddar cheese.
- Bake for 45-50 minutes until bubbly and golden.
- Remove from the oven and let it cool, then garnish with green onions.
Notes
For a lighter version, substitute ground turkey and use low-fat sour cream and cheese. Can be made ahead and refrigerated or frozen for later.
