For the mousse

Instructions
Preparation
- Chop the chocolate and place it into a large heatproof bowl.
- In a small saucepan, heat 1 cup of heavy cream for 2-3 minutes until steaming.
- Pour the heated cream over the chopped chocolate and let it stand for 5 minutes.
- Stir the chocolate until completely melted and let it cool for 20-30 minutes.
- In a large bowl, beat the remaining 2 1/2 cups of heavy cream with powdered sugar and vanilla until soft peaks form.
- Gently add the cooled chocolate mixture to the whipped cream and whip until stiff peaks form.
- Transfer the mousse to parfait glasses or small ramekins, cover, and chill for 4 hours.
Serving
- Serve garnished with additional chocolate, whipped cream, fresh berries, or pirouette cookies.
Notes
Chill covered mousse for up to 3 days. Avoid reheating; serve fresh from the fridge.
