For the mousse

  • 3.5 cups heavy cream, divided (Essential for the airy texture.)

  • 2/3 cup powdered sugar, adjust to taste (Sweetness is subjective.)
  • 1 tsp vanilla extract (Enhances the chocolate flavor.)

Instructions

Preparation

  1. Chop the chocolate and place it into a large heatproof bowl.
  2. In a small saucepan, heat 1 cup of heavy cream for 2-3 minutes until steaming.
  3. Pour the heated cream over the chopped chocolate and let it stand for 5 minutes.
  4. Stir the chocolate until completely melted and let it cool for 20-30 minutes.
  5. In a large bowl, beat the remaining 2 1/2 cups of heavy cream with powdered sugar and vanilla until soft peaks form.
  6. Gently add the cooled chocolate mixture to the whipped cream and whip until stiff peaks form.
  7. Transfer the mousse to parfait glasses or small ramekins, cover, and chill for 4 hours.

Serving

  1. Serve garnished with additional chocolate, whipped cream, fresh berries, or pirouette cookies.

Notes

Chill covered mousse for up to 3 days. Avoid reheating; serve fresh from the fridge.
