- 1 cup yellow cornmeal
- 1 cup all-purpose flour
- 1/4 cup honey (for the cornbread)

- 2 large eggs

- 1 cup buttermilk
- 1/4 cup honey (for topping)
- 1/2 cup softened butter for honey butter
Instructions
- Preheat your oven to 375°F (190°C) and grease a baking dish.
- In a mixing bowl, combine the mashed sweet potatoes, cornmeal, flour, honey, baking powder, and salt. Stir until blended.
- Add the eggs one at a time, mixing well. Incorporate the melted butter and buttermilk until the mixture is smooth.
- Pour the batter into the prepared dish and spread evenly.
- Bake for about 30 minutes or until golden brown and a toothpick comes out clean.
- For the honey butter, mix softened butter and honey in a small bowl until smooth.
- Allow the cornbread to cool slightly, then serve warm with the honey butter on top.
Notes
For a unique twist, add spices like cinnamon or nutmeg to the batter. Letting the cornbread sit for a few minutes before slicing helps maintain its moist texture.
