Description

A delightful and comforting twist on classic Chicken Parmesan, this creamy soup features tender chicken, rich flavors, and the unmistakable taste of Parmesan cheese.

Ingredients

Scale
  • 1 pound boneless skinless chicken breasts
  • 4 cups chicken broth
  • 1 can (15 oz) diced tomatoes
  • 1 cup heavy cream
  • 1 tablespoon Italian seasoning
  • 2 cloves garlic, minced
  • 1 cup Parmesan cheese, grated
  • Salt and pepper to taste
  • Fresh basil for garnish (optional)

Instructions

  1. Place the chicken breasts in the crockpot, laying them flat for even cooking.
  2. Add the chicken broth, diced tomatoes, heavy cream, Italian seasoning, minced garlic, salt, and pepper. Stir gently to combine.
  3. Cook on low for 360 minutes or on high for 240 minutes until the chicken is tender.
  4. Once cooked, shred the chicken with two forks and mix it back into the soup.
  5. Stir in the Parmesan cheese until melted and combined.
  6. Serve hot, garnished with fresh basil if desired.

Notes

Feel free to add spinach or kale for a nutritious twist, or experiment with different cheeses. You can use pre-cooked rotisserie chicken for a quicker option.
