A heartwarming Crockpot Cheesesteak Potato Casserole filled with seasoned ground beef, tender potatoes, and gooey cheese, perfect for busy weeknights or family gatherings.

- 1 lb ground beef (80/20)
- 1 green bell pepper, sliced
- 1 red bell pepper, sliced
- 1 yellow onion, sliced
- 3 russet potatoes, diced
- 8 oz provolone cheese
- 10.5 oz cream of mushroom soup
- 1/2 cup sour cream
- 2 tsp steak seasoning
- 2 tbsp Worcestershire sauce
- 3 cloves garlic, minced
- Salt and pepper to taste
- 1 tbsp oil
Instructions
- Slice bell peppers and onions into thin strips. Dice russet potatoes into 1-inch cubes and place them in cold water.
- In a skillet, heat oil and brown the ground beef, seasoning with steak seasoning. Transfer to the crockpot.
- Sauté onions and peppers in the same skillet until softened. Stir in garlic, season with salt and pepper, and deglaze with Worcestershire sauce.
- Layer half of the potatoes in the crockpot, followed by half of the beef and half of the sautéed vegetables.
- Whisk cream of mushroom soup and sour cream together. Pour half over the layers and add a layer of provolone cheese. Repeat layering.
- Cook on low for 6-7 hours or high for 3-4 hours, stirring halfway through. Let rest for 15 minutes before serving.
Notes
For a lighter version, consider using lean ground turkey and low-fat cheese.
