- 1 lb ground beef
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 large egg
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano

- 1/2 teaspoon black pepper
- 2 tablespoons olive oil
- 2 cups French onion soup
- 1 tablespoon Worcestershire sauce
- 1 teaspoon Dijon mustard
- 1 teaspoon fresh thyme
- 1 cup shredded Gruyère cheese
Instructions
- Prepare the meatballs: Mix ground beef, breadcrumbs, Parmesan cheese, egg, garlic, dried thyme, oregano, salt, and pepper in a large bowl until well combined. Shape into meatballs about one inch in diameter.
- Brown the meatballs: Heat olive oil in a skillet over medium heat, add the meatballs, and cook for 2-3 minutes on each side until golden brown. Transfer to the crock pot.
- Prepare the sauce: Whisk together French onion soup, Worcestershire sauce, Dijon mustard, and fresh thyme in a separate bowl. Pour over meatballs in the crock pot.
- Cook the meatballs: Cover and cook on low for 4-6 hours or high for 2-3 hours until tender.
- Finish the dish: Sprinkle Gruyère cheese over the meatballs 10 minutes before serving, cover to melt cheese.
- Serve and enjoy: Serve over mashed potatoes, rice, or on their own, garnished with extra fresh thyme.
Notes
Consider adding red pepper flakes for heat. Use gluten-free breadcrumbs for a gluten-free option.
