- 1 large cauliflower
- 6 tbsp olive oil
- 1 tsp Old Bay seasoning
- 1/2 tsp chili pepper
- Fresh ground black pepper, to taste
- 8 oz sharp white cheddar cheese, grated
- 4 oz parmesan cheese, grated
Instructions
- Preheat the oven to 425°F (220°C).
- Combine the cauliflower florets with olive oil, Old Bay seasoning, chili pepper, and fresh ground black pepper.
- Line a baking sheet with parchment paper.
- Spread the seasoned cauliflower evenly on the sheet.
- Roast the cauliflower for 30-35 minutes, flipping halfway through.
- Sprinkle the grated cheddar and parmesan cheese over the cauliflower in the last 10 minutes of roasting.
- Remove the baking sheet from the oven and let the cauliflower cool slightly before serving.
Notes
For extra crunch, pre-soak the florets in salted water for 20 minutes before roasting.
