Ingredients

- 500 grams (1 lb) potatoes, peeled and cubed
- 1 teaspoon salt (for boiling)
- 1/3 cup fresh grated Parmesan cheese
- 1/4 teaspoon fresh ground black pepper
- 4 tablespoons potato starch
- Fresh parsley, chopped
- 1 tablespoon potato starch (for dusting)
- Oil for frying
Instructions
- Boil the potato cubes in salted water until fork-tender, about 10-12 minutes.
- Drain the potatoes and mash them until smooth.
- Mix in the black pepper, chopped parsley, grated Parmesan cheese, and 4 tablespoons of potato starch until well combined.
- Divide the mixture into two portions and roll each into a dough ball, dusting your surface with the additional tablespoon of potato starch.
- Roll out each ball to form a rectangle about 1/2 inch thick, then cut into strips.
- Heat the oil to around 350°F (175°C) in a deep fryer or large pan.
- Fry the potato strips in batches until golden brown, about 5-7 minutes per batch.
- Drain the fries on a wire rack set over paper towels and serve hot, optionally sprinkled with more grated Parmesan.
Notes
For extra crispiness, consider double frying. Also, try adding herbs or spices for different flavor profiles.
