  • 3/4 cup cold soda water
  • 1 cup panko breadcrumbs
  • Oil for frying
  • 2 sandwich buns
  • 1/4 cup tartar sauce
  • Fresh lettuce and tomato slices

Instructions

  1. Heat oil in a deep skillet or frying pan until it reaches 350°F (175°C).
  2. Combine the flour, cornstarch, salt, black pepper, paprika, and garlic powder in a mixing bowl.
  3. Pour in the cold soda water, stirring until you achieve a smooth batter.
  4. Dip each cod fillet into the batter, letting excess drip off.
  5. Coat the batter-covered fillet with panko breadcrumbs.
  6. Fry the coated fillet for about 4 minutes on each side until golden brown.
  7. Toast the sandwich buns lightly while the cod fries.
  8. Remove the cod from the oil and let it rest on a paper towel.
  9. Assemble the sandwich with tartar sauce, lettuce, tomato slices, and the cod fillet.
