- 2 large potatoes, peeled and cut into cubes
- 1 cup grated cheddar cheese
- 1/4 cup grated parmesan cheese
- 1/4 cup chopped fresh parsley
- 4 tablespoons butter
- 2 cloves garlic, minced
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C) and grease a baking sheet.
- Bring a large pot of salted water to boil and add potato cubes; cook for 10-12 minutes.
- Drain potatoes and return them to the pot.
- Melt butter in a small pan over medium heat, add garlic and sauté for 1-2 minutes.
- Pour melted garlic butter over the potatoes and mash until smooth.
- Stir in cheddar cheese, parmesan, parsley, salt, and pepper.
- Roll mashed potato mixture into balls and place them on the prepared baking sheet.
- Bake for 15-20 minutes until golden brown.
- Serve hot, garnished with extra parsley.
