Ingredients

  • 2 large potatoes, peeled and cut into cubes
  • 1 cup grated cheddar cheese
  • 1/4 cup grated parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 4 tablespoons butter
  • 2 cloves garlic, minced
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and grease a baking sheet.
  2. Bring a large pot of salted water to boil and add potato cubes; cook for 10-12 minutes.
  3. Drain potatoes and return them to the pot.
  4. Melt butter in a small pan over medium heat, add garlic and sauté for 1-2 minutes.
  5. Pour melted garlic butter over the potatoes and mash until smooth.
  6. Stir in cheddar cheese, parmesan, parsley, salt, and pepper.
  7. Roll mashed potato mixture into balls and place them on the prepared baking sheet.
  8. Bake for 15-20 minutes until golden brown.
  9. Serve hot, garnished with extra parsley.
