- 5–6 large egg yolks
- 1/2 cup granulated sugar
- Approx. 1/4 cup extra granulated sugar
- Pinch of salt
- Hot water for water bath
Instructions
- Preheat oven to 325°F (160°C) and heat the heavy cream with the vanilla.
- In a bowl, whisk together egg yolks, sugar, and salt until combined.
- Temper egg yolks with warm cream, then strain the mixture.
- Pour custard into ramekins and set them in a baking pan with hot water.
- Bake for 30-40 minutes, ensuring they jiggle slightly.
- Cool in water bath, then refrigerate for at least 2 hours.
- Before serving, sprinkle sugar on top and use a torch to caramelize.
Notes
Ensure not to overbake to avoid rubbery texture. Use a kitchen torch for best results in caramelizing sugar.
