Ingredients

  • 1 vanilla bean (or 1 tsp pure vanilla extract)
  • 56 large egg yolks
  • 1/2 cup granulated sugar
  • Approx. 1/4 cup extra granulated sugar
  • Pinch of salt
  • Hot water for water bath

Instructions

  1. Preheat oven to 325°F (160°C) and heat the heavy cream with the vanilla.
  2. In a bowl, whisk together egg yolks, sugar, and salt until combined.
  3. Temper egg yolks with warm cream, then strain the mixture.
  4. Pour custard into ramekins and set them in a baking pan with hot water.
  5. Bake for 30-40 minutes, ensuring they jiggle slightly.
  6. Cool in water bath, then refrigerate for at least 2 hours.
  7. Before serving, sprinkle sugar on top and use a torch to caramelize.

Notes

Ensure not to overbake to avoid rubbery texture. Use a kitchen torch for best results in caramelizing sugar.
