Description

A magical dessert that combines the velvety texture of cheesecake with a luxurious caramelized sugar topping.


Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup unsalted butter, melted
  • 3 (8 oz) packages of cream cheese, softened
  • 1 cup sugar
  • 1 tsp vanilla extract
  • 3 large eggs
  • 1/2 cup heavy cream
  • 1/4 cup brown sugar (for topping)

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. In a medium bowl, mix the graham cracker crumbs and 1/4 cup sugar. Add the melted butter and stir until well combined.
  3. Press the mixture firmly into the bottom of a springform pan to create a crust. Bake for 10 minutes, then remove and set aside to cool.
  4. In a large bowl, beat the softened cream cheese and 1 cup sugar until smooth and creamy. Add in the vanilla extract and eggs, one at a time, mixing well after each addition.
  5. Pour in the heavy cream and blend until smooth. Pour this luscious batter over the prepared crust in the springform pan.
  6. Bake for 50-60 minutes, or until the center is set but still slightly jiggly. Turn off the oven and allow the cheesecake to cool in the oven with the door slightly ajar for 1 hour.
  7. Refrigerate the cheesecake for at least 4 hours or overnight to fully set.
  8. Before serving, sprinkle the top of the cheesecake with the brown sugar and carefully caramelize it using a kitchen torch.

Notes

Avoid overmixing the batter to prevent cracks. Use softened cream cheese for the best texture.
