A magical dessert that combines the velvety texture of cheesecake with a luxurious caramelized sugar topping.

- 1 1/2 cups graham cracker crumbs
- 1/4 cup sugar
- 1/2 cup unsalted butter, melted
- 3 (8 oz) packages of cream cheese, softened
- 1 cup sugar
- 1 tsp vanilla extract
- 3 large eggs
- 1/2 cup heavy cream
- 1/4 cup brown sugar (for topping)
Instructions
- Preheat your oven to 325°F (163°C).
- In a medium bowl, mix the graham cracker crumbs and 1/4 cup sugar. Add the melted butter and stir until well combined.
- Press the mixture firmly into the bottom of a springform pan to create a crust. Bake for 10 minutes, then remove and set aside to cool.
- In a large bowl, beat the softened cream cheese and 1 cup sugar until smooth and creamy. Add in the vanilla extract and eggs, one at a time, mixing well after each addition.
- Pour in the heavy cream and blend until smooth. Pour this luscious batter over the prepared crust in the springform pan.
- Bake for 50-60 minutes, or until the center is set but still slightly jiggly. Turn off the oven and allow the cheesecake to cool in the oven with the door slightly ajar for 1 hour.
- Refrigerate the cheesecake for at least 4 hours or overnight to fully set.
- Before serving, sprinkle the top of the cheesecake with the brown sugar and carefully caramelize it using a kitchen torch.
Notes
Avoid overmixing the batter to prevent cracks. Use softened cream cheese for the best texture.
