Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar (for the crust)
  • 1/2 cup unsalted butter, melted
  • 3 (8 oz) packages cream cheese, softened to room temperature
  • 3/4 cup granulated sugar (for cheesecake filling)
  • 1 tsp vanilla extract
  • 3 large eggs
  • 1 cup sour cream
  • 1/2 cup heavy cream
  • 1/4 cup granulated sugar (for topping)
  • 1 tbsp brown sugar (for topping)

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. Prepare a 9-inch springform pan by greasing it and lining the bottom with parchment paper.
  3. Make the crust by combining graham cracker crumbs, 1/4 cup sugar, and melted butter. Press the mixture into the bottom of the prepared pan.
  4. Bake the crust for 10 minutes and let it cool slightly.
  5. Prepare the cheesecake filling by beating together cream cheese, 3/4 cup sugar, and vanilla extract until smooth.
  6. Incorporate the eggs one at a time, mixing well after each.
  7. Add sour cream and heavy cream until completely smooth.
  8. Combine the filling with the cooled crust and bake for 55-60 minutes. The center should jiggle slightly.
  9. Cool the cheesecake in the oven for 1 hour after baking.
  10. Refrigerate the cheesecake for at least 4 hours, preferably overnight.
  11. Prepare the topping by sprinkling granulated and brown sugar evenly over the cheesecake.
  12. Caramelize the sugar using a kitchen torch until golden brown, or under a broiler for a few minutes.
  13. Allow the caramelized sugar to cool before slicing and serving.

Notes

For best results, use room temperature ingredients and consider adding lemon zest for extra flavor. Serve with fresh berries or a drizzle of chocolate for indulgence.
