- 1 cup heavy cream

- 1 teaspoon dried oregano
- 1/2 teaspoon red pepper flakes (optional)
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup fresh parsley, chopped (for garnish)
Instructions
- Heat the olive oil in a large skillet over medium-high heat.
- Season the salmon fillets with salt and black pepper on both sides.
- Place the salmon fillets in the skillet, skin-side down, and cook for 3-4 minutes per side until golden brown. Remove the salmon and set aside.
- Add the minced garlic to the skillet and sauté for 1-2 minutes.
- Toss in the chopped spinach and sun-dried tomatoes, cooking for an additional 2-3 minutes until the spinach is wilted.
- Pour in the heavy cream and broth, stirring to combine.
- Add the oregano, red pepper flakes, salt, and pepper, and let the sauce simmer for about 5 minutes.
- Return the salmon fillets to the skillet and spoon the sauce over them, simmering for an additional 2-3 minutes.
- Garnish with parsley before serving.
Notes
For a smoother sauce, blend the heavy cream and broth together before adding to the skillet. Serve with rice or pasta, and consider adding cream cheese for extra creaminess.
