Ingredients

  • 4 salmon fillets
  • 2 tablespoons virgin olive oil
  • 3 cloves garlic, minced
  • 1 cup fresh spinach, chopped

  • 1 cup heavy cream
  • 1/2 cup vegetable or seafood broth
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes (optional)
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup fresh parsley, chopped (for garnish)

Instructions

  1. Heat the olive oil in a large skillet over medium-high heat.
  2. Season the salmon fillets with salt and black pepper on both sides.
  3. Place the salmon fillets in the skillet, skin-side down, and cook for 3-4 minutes per side until golden brown. Remove the salmon and set aside.
  4. Add the minced garlic to the skillet and sauté for 1-2 minutes.
  5. Toss in the chopped spinach and sun-dried tomatoes, cooking for an additional 2-3 minutes until the spinach is wilted.
  6. Pour in the heavy cream and broth, stirring to combine.
  7. Add the oregano, red pepper flakes, salt, and pepper, and let the sauce simmer for about 5 minutes.
  8. Return the salmon fillets to the skillet and spoon the sauce over them, simmering for an additional 2-3 minutes.
  9. Garnish with parsley before serving.

Notes

For a smoother sauce, blend the heavy cream and broth together before adding to the skillet. Serve with rice or pasta, and consider adding cream cheese for extra creaminess.
