Instructions
- Pour 1 tablespoon of olive oil into a medium skillet over medium-high heat.
- Ensure that the scallops are thoroughly pat dry using paper towels.
- Place the scallops in a single layer in the skillet, searing for about 2-3 minutes per side.
- Transfer the scallops to a plate and set aside.
- Add 2 tablespoons of olive oil to the skillet, followed by the minced garlic.
- Sauté the garlic for about 30 seconds or until fragrant.
- Pour in the chicken broth and heavy cream while whisking continuously.
- Add garlic powder and Italian seasoning, stirring until the mixture thickens slightly.
- Introduce the sun-dried tomatoes and chopped spinach into the sauce, simmering until the spinach wilts.
- Gently add the seared scallops back into the pan and stir to combine.
- Serve the Creamy Tuscan Garlic Scallops over pasta if desired.
Notes
For added flavor, include a splash of lemon juice. Freshly grated parmesan cheese enhances the richness.
