  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 1/2 cup parmesan cheese
  • 1 cup spinach, chopped
  • 1/2 cup sun-dried tomatoes

Instructions

  1. Pour 1 tablespoon of olive oil into a medium skillet over medium-high heat.
  2. Ensure that the scallops are thoroughly pat dry using paper towels.
  3. Place the scallops in a single layer in the skillet, searing for about 2-3 minutes per side.
  4. Transfer the scallops to a plate and set aside.
  5. Add 2 tablespoons of olive oil to the skillet, followed by the minced garlic.
  6. Sauté the garlic for about 30 seconds or until fragrant.
  7. Pour in the chicken broth and heavy cream while whisking continuously.
  8. Add garlic powder and Italian seasoning, stirring until the mixture thickens slightly.
  9. Introduce the sun-dried tomatoes and chopped spinach into the sauce, simmering until the spinach wilts.
  10. Gently add the seared scallops back into the pan and stir to combine.
  11. Serve the Creamy Tuscan Garlic Scallops over pasta if desired.

Notes

For added flavor, include a splash of lemon juice. Freshly grated parmesan cheese enhances the richness.
