- 4 juicy chicken thighs
- 2 tablespoons olive oil
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/2 cup sun-dried tomatoes
- 3 cloves garlic, minced
- 1 teaspoon Italian seasoning
- 1/2 cup fresh spinach, chopped
- 1/4 cup grated parmesan cheese
Instructions
- Heat the olive oil in a large pan over medium heat. Add the chicken thighs, seasoned with salt and pepper, and sear for 6-7 minutes on each side.
- Remove the chicken from the pan and set aside.
- Add minced garlic and sun-dried tomatoes to the same pan and sauté for 2 minutes.
- Sprinkle in the Italian seasoning and stir.
- Pour in the heavy cream and chicken broth, stirring well, and let simmer for 5 minutes.
- Stir in the chopped spinach and parmesan cheese until melted.
- Return the chicken to the pan and cook for an additional 5 minutes.
- Serve hot, optionally garnished with extra parmesan.
Notes
Ensure chicken thighs are at room temperature before cooking for optimal searing. Don’t overcrowd the pan when searing.
