Description

A comforting dish featuring seared chicken thighs in a rich, creamy sauce with sun-dried tomatoes and spinach.


Ingredients

  • 4 juicy chicken thighs
  • 2 tablespoons olive oil
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup sun-dried tomatoes
  • 3 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1/2 cup fresh spinach, chopped
  • 1/4 cup grated parmesan cheese

Instructions

  1. Heat the olive oil in a large pan over medium heat. Add the chicken thighs, seasoned with salt and pepper, and sear for 6-7 minutes on each side.
  2. Remove the chicken from the pan and set aside.
  3. Add minced garlic and sun-dried tomatoes to the same pan and sauté for 2 minutes.
  4. Sprinkle in the Italian seasoning and stir.
  5. Pour in the heavy cream and chicken broth, stirring well, and let simmer for 5 minutes.
  6. Stir in the chopped spinach and parmesan cheese until melted.
  7. Return the chicken to the pan and cook for an additional 5 minutes.
  8. Serve hot, optionally garnished with extra parmesan.

Notes

Ensure chicken thighs are at room temperature before cooking for optimal searing. Don’t overcrowd the pan when searing.
