Ingredients

  • 4 salmon fillets (about 6 oz each)
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • 2 tablespoons butter
  • 2 cloves garlic, minced
  • 1 cup fresh spinach, chopped
  • 1/2 cup roasted red peppers, jarred or homemade, chopped
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon lemon juice
  • Fresh parsley, for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Drizzle the olive oil in a large oven-safe skillet over medium-high heat.
  3. Season the salmon fillets generously with salt and pepper.
  4. Place the salmon skin-side down in the skillet and cook for about 4-5 minutes per side until golden.
  5. Remove the salmon and set aside.
  6. Melt the butter in the same skillet over medium heat.
  7. Add the minced garlic and sauté for about a minute.
  8. Stir in the chopped spinach and cook until wilted.
  9. Add the roasted red peppers and mix well.
  10. Pour in the heavy cream and add the grated Parmesan cheese.
  11. Simmer the mixture until it thickens, then drizzle in the lemon juice.
  12. Return the salmon fillets to the skillet and spoon the sauce over them.
  13. Transfer the skillet to the preheated oven and bake for 5-7 minutes until cooked through.

Notes

Always season the salmon well and watch for doneness cues. Consider using Greek yogurt as a lighter alternative to heavy cream.
