  • 3 tablespoons butter, divided
  • 1 tablespoon olive oil
  • 1 tablespoon flour
  • 1 cup low sodium chicken broth
  • 1/2 cup milk
  • 1/4 cup sour cream
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon Italian seasoning
  • 1 (1 oz.) packet ranch seasoning mix
  • Fresh parsley, to garnish (optional)

Instructions

  1. Prepare the chicken by pounding the breasts to an even thickness of about 1 inch, then season with salt and pepper.
  2. Sear the chicken in a skillet over medium-high heat with 1 tablespoon of butter and olive oil for about 4-5 minutes each side until golden brown. Transfer to a plate.
  3. Make the sauce by lowering the heat, adding the remaining butter, and creating a roux with flour for about a minute.
  4. Combine the chicken broth, milk, sour cream, onion powder, garlic powder, Italian seasoning, and ranch seasoning mix, stirring until smooth.
  5. Return the chicken to the skillet, spooning the sauce over it, and simmer for about 5-7 minutes until heated through.
  6. Serve hot, garnished with fresh parsley if desired.
