Description

A luxurious and comforting dessert that combines the earthiness of pistachios with creamy mascarpone cheese.


Ingredients

  • 1 cup pistachios, shelled
  • 1 1/2 cups mascarpone cheese, softened
  • 1/2 cup heavy cream
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup brewed espresso or strong coffee, cooled
  • 2 tablespoons coffee liqueur (optional)
  • 24 ladyfinger cookies
  • 2 tablespoons cocoa powder (for dusting)
  • 1/4 cup chopped pistachios (for garnish)

Instructions

  1. Pulse the shelled pistachios until finely ground but not a paste.
  2. Combine mascarpone cheese, heavy cream, powdered sugar, and vanilla extract in a large mixing bowl.
  3. Beat the mixture until fluffy and smooth.
  4. Fold the ground pistachios into the mascarpone mixture.
  5. Combine cooled brewed espresso and coffee liqueur in a shallow dish.
  6. Dip each ladyfinger quickly into the espresso mixture.
  7. Lay the dipped ladyfingers at the bottom of a 9×9-inch dish.
  8. Spread half of the pistachio mascarpone mixture over the ladyfingers.
  9. Repeat layering with remaining ladyfingers and mascarpone mixture.
  10. Cover with plastic wrap and refrigerate for at least 4 hours or overnight.
  11. Dust with cocoa powder and garnish with chopped pistachios before serving.

Notes

To enhance flavor, chill overnight before serving.
