- 1 cup pistachios, shelled
- 1 1/2 cups mascarpone cheese, softened
- 1/2 cup heavy cream
- 1/4 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup brewed espresso or strong coffee, cooled
- 2 tablespoons coffee liqueur (optional)
- 24 ladyfinger cookies
- 2 tablespoons cocoa powder (for dusting)
- 1/4 cup chopped pistachios (for garnish)
Instructions
- Pulse the shelled pistachios until finely ground but not a paste.
- Combine mascarpone cheese, heavy cream, powdered sugar, and vanilla extract in a large mixing bowl.
- Beat the mixture until fluffy and smooth.
- Fold the ground pistachios into the mascarpone mixture.
- Combine cooled brewed espresso and coffee liqueur in a shallow dish.
- Dip each ladyfinger quickly into the espresso mixture.
- Lay the dipped ladyfingers at the bottom of a 9×9-inch dish.
- Spread half of the pistachio mascarpone mixture over the ladyfingers.
- Repeat layering with remaining ladyfingers and mascarpone mixture.
- Cover with plastic wrap and refrigerate for at least 4 hours or overnight.
- Dust with cocoa powder and garnish with chopped pistachios before serving.
Notes
To enhance flavor, chill overnight before serving.
