Ingredients
- Udon Noodles
- Creamy Peanut Butter
- Fresh Herbs (cilantro or basil)
- Chili Flakes or Fresh Chili
- Lime Juice
- Soy Sauce
- Sesame Oil
- Garlic (optional)
Instructions
- Start by cooking the udon noodles according to package instructions until they’re tender. Once cooked, drain them thoroughly and set aside to cool slightly.
- In a mixing bowl, combine the creamy peanut butter, soy sauce, sesame oil, lime juice, and minced garlic (if you’re using it). Stir these ingredients together until the mixture is smooth and creamy, creating the vibrant peanut sauce.
- Toss the cooked udon noodles in the peanut sauce, ensuring that every noodle is lovingly coated with that delectable sauce.
- Add in the chopped fresh herbs and chili to your taste. Mix everything together well so the flavors meld beautifully.
- Serve the creamy peanut udon noodles warm or allow them to cool to room temperature. Garnish with additional herbs and chili, if desired, for a pop of color and flavor!
Notes
For added flavor, sprinkle toasted sesame seeds on top before serving. You can also add cooked vegetables or grilled chicken/tofu for more protein.
