- 4 large egg yolks
Instructions
- Pour the heavy cream, whole milk, and sugar into a medium saucepan and heat on medium until the sugar dissolves.
- Whisk the egg yolks in a mixing bowl, then gradually introduce half a cup of the warm cream mixture into the yolks while whisking continuously.
- Pour the egg mixture back into the saucepan, stirring constantly until the custard thickens, about 5 to 7 minutes.
- Strain the custard through a fine mesh sieve into a clean bowl.
- Stir in the passion fruit pulp, vanilla extract, and a pinch of salt.
- Cool the mixture to room temperature, then cover and refrigerate for at least four hours or overnight.
- Churn the custard in an ice cream maker according to the manufacturer’s instructions.
- Transfer the ice cream to an airtight container and freeze for at least 4 hours.
