Ingredients

  • 2 cups heavy cream
  • 1 cup whole milk
  • 3/4 cup granulated sugar
  • 1/4 cup passion fruit pulp
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • 4 large egg yolks

Instructions

  1. Pour the heavy cream, whole milk, and sugar into a medium saucepan and heat on medium until the sugar dissolves.
  2. Whisk the egg yolks in a mixing bowl, then gradually introduce half a cup of the warm cream mixture into the yolks while whisking continuously.
  3. Pour the egg mixture back into the saucepan, stirring constantly until the custard thickens, about 5 to 7 minutes.
  4. Strain the custard through a fine mesh sieve into a clean bowl.
  5. Stir in the passion fruit pulp, vanilla extract, and a pinch of salt.
  6. Cool the mixture to room temperature, then cover and refrigerate for at least four hours or overnight.
  7. Churn the custard in an ice cream maker according to the manufacturer’s instructions.
  8. Transfer the ice cream to an airtight container and freeze for at least 4 hours.
