Description

A comforting bowl of creamy Parmesan Italian Sausage Soup, rich with flavor and warmth that brings families together.


Ingredients

Scale
  • 1 lb Italian sausage (mild or spicy, casings removed)
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 2 cups heavy cream
  • 1 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon red pepper flakes (optional)
  • 2 cups kale or spinach, chopped
  • Salt and pepper to taste
  • Crusty bread for serving (optional)

Instructions

  1. Heat the olive oil in a large pot or Dutch oven over medium heat.
  2. Add the Italian sausage and break it apart as it cooks for about 5-7 minutes.
  3. Introduce the chopped onion and sauté for 3-4 minutes until translucent.
  4. Stir in the minced garlic for 1 minute.
  5. Pour in the chicken broth and let it simmer for around 10 minutes.
  6. Reduce the heat to low and stir in the heavy cream and grated Parmesan cheese.
  7. Add the Italian seasoning and optional red pepper flakes.
  8. Incorporate the chopped kale or spinach and simmer for another 5 minutes.
  9. Season with salt and pepper to taste before serving hot.

Notes

For a lighter version, substitute ground turkey or chicken sausage and low-fat milk for cream.
