- 1 lb Italian sausage (mild or spicy, casings removed)
- 1 tablespoon olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken broth
- 2 cups heavy cream
- 1 cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- 1/2 teaspoon red pepper flakes (optional)
- 2 cups kale or spinach, chopped
- Salt and pepper to taste
- Crusty bread for serving (optional)
Instructions
- Heat the olive oil in a large pot or Dutch oven over medium heat.
- Add the Italian sausage and break it apart as it cooks for about 5-7 minutes.
- Introduce the chopped onion and sauté for 3-4 minutes until translucent.
- Stir in the minced garlic for 1 minute.
- Pour in the chicken broth and let it simmer for around 10 minutes.
- Reduce the heat to low and stir in the heavy cream and grated Parmesan cheese.
- Add the Italian seasoning and optional red pepper flakes.
- Incorporate the chopped kale or spinach and simmer for another 5 minutes.
- Season with salt and pepper to taste before serving hot.
Notes
For a lighter version, substitute ground turkey or chicken sausage and low-fat milk for cream.
