- 4 cups chicken broth

- 1 cup ditalini pasta
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 2 cups fresh spinach
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat a large pot over medium heat. Add the Italian sausage, breaking it apart until browned.
- Drain excess fat if necessary. Then, add the chopped onion and minced garlic, sautéing for 3-4 minutes.
- Pour in the chicken broth and diced tomatoes, bringing to a boil.
- Stir in the ditalini pasta and Italian seasoning, then reduce heat and cover. Allow it to simmer for 8-10 minutes until pasta is al dente.
- Add the heavy cream and stir until the soup is creamy.
- Incorporate the grated Parmesan cheese until melted and blended.
- Add fresh spinach until wilted, then season with salt and pepper as needed.
- Serve hot, garnished with fresh parsley.
