Instructions

  1. Prepare the chicken: Heat the oil in a large saucepan over medium-high heat. Season the chicken with 1 teaspoon of Cajun seasoning and cook until golden-brown, about 2-4 minutes per side. Set aside.
  2. Sauté the vegetables: In the same pan, melt the butter and add the diced onion, celery, and bell pepper. Cook until tender, about 5-7 minutes.
  3. Add aromatics: Stir in the garlic, thyme, and remaining Cajun seasoning, and cook until fragrant, about 1 minute.
  4. Craft the soup base: Pour in the chicken broth, then add the cooked chicken, diced tomatoes (if using), Worcestershire sauce, and pasta. Bring to a boil, then reduce heat and simmer until pasta is al dente, about 7 minutes.
  5. Shred the chicken: Remove the chicken from the pot, shred it, and return to the pot.
  6. Add creaminess: Turn off the heat and stir in the heavy cream and parmesan cheese until melted.
  7. Finish with freshness: Incorporate lemon juice, parsley, and green onions. Season to taste.
