Ingredients

  • 2 tablespoons extra virgin olive oil, divided
  • 4 to 5 chicken sausages, sliced
  • 1 shallot, diced
  • 6 cloves garlic, minced
  • 1 teaspoon Italian seasoning or dried oregano
  • 1 teaspoon kosher salt, divided
  • 1/4 cup tomato paste
  • 1 3/4 cups low-sodium chicken broth
  • 1/2 cup heavy cream or full-fat coconut milk
  • 1 pound gnocchi
  • 3 cups fresh spinach, chopped
  • 12 ounces grated Parmesan cheese, plus more for garnish
  • 1/4 cup basil leaves, julienned

Instructions

  1. Place a large skillet over medium heat and add 1 tablespoon of olive oil. Once warm, add the sliced chicken sausage and sauté until golden brown, about 3-5 minutes on each side. Transfer the sausage to a plate and set aside.
  2. Add the remaining tablespoon of olive oil, diced shallots, minced garlic, and 1/2 teaspoon of salt to the skillet. Cook together until shallot becomes tender, about 3-4 minutes.
  3. Stir in the Italian seasoning and tomato paste; cook for 1 minute.
  4. Gradually add chicken broth and heavy cream to the skillet, mixing well and incorporating the remaining 1/2 teaspoon of salt.
  5. Introduce the gnocchi and bring everything to a gentle simmer. Cook until the gnocchi is tender, about 3-5 minutes.
  6. Return the cooked sausage back to the skillet, add chopped spinach, and cook until spinach wilts.
  7. Finish by stirring in grated Parmesan cheese until it melts into the sauce. Garnish with basil and additional Parmesan cheese before serving.

Notes

For extra flavor, add a splash of lemon juice or red pepper flakes while simmering. Substitute the chicken sausage with plant-based options for a vegetarian dish.
