Description

A comforting and indulgent bake featuring smoked Gouda and fresh garden vegetables, topped with a crispy, golden layer.


Ingredients

  • 2 tablespoons butter
  • 1/2 onion, thinly sliced
  • 1 small zucchini, sliced in rounds 1/8 to 1/4 inch thick
  • 1 small yellow squash, sliced in rounds 1/8 to 1/4 inch thick
  • 2 large cloves garlic, minced
  • 1/2 cup heavy cream
  • 1/4 cup grated parmesan
  • 1 cup shredded smoked gouda

Instructions

  1. Preheat the oven to 450 degrees F.
  2. Melt the butter in an oven-proof skillet over medium heat.
  3. Add the sliced onion and cook until browned, about 5 minutes.
  4. Stir in the minced garlic and cook for another minute.
  5. Pour in the heavy cream and simmer until thickened.
  6. Stir in the grated parmesan until fully incorporated.
  7. Add the zucchini and yellow squash, cooking for an additional 4-5 minutes.
  8. Sprinkle shredded smoked gouda over the top and transfer the skillet to the oven.
  9. Bake for 15-20 minutes, until the cheese is golden brown and bubbling.

Notes

For extra flavor, add smoked paprika or fresh herbs before baking. You can also include shredded chicken or mushrooms for a heartier dish.
