- 2 tablespoons butter
- 1/2 onion, thinly sliced
- 1 small zucchini, sliced in rounds 1/8 to 1/4 inch thick
- 1 small yellow squash, sliced in rounds 1/8 to 1/4 inch thick
- 2 large cloves garlic, minced
- 1/2 cup heavy cream
- 1/4 cup grated parmesan
- 1 cup shredded smoked gouda
Instructions
- Preheat the oven to 450 degrees F.
- Melt the butter in an oven-proof skillet over medium heat.
- Add the sliced onion and cook until browned, about 5 minutes.
- Stir in the minced garlic and cook for another minute.
- Pour in the heavy cream and simmer until thickened.
- Stir in the grated parmesan until fully incorporated.
- Add the zucchini and yellow squash, cooking for an additional 4-5 minutes.
- Sprinkle shredded smoked gouda over the top and transfer the skillet to the oven.
- Bake for 15-20 minutes, until the cheese is golden brown and bubbling.
Notes
For extra flavor, add smoked paprika or fresh herbs before baking. You can also include shredded chicken or mushrooms for a heartier dish.
