- 4 boneless, skinless chicken breasts
- 1 cup flour
- 1 tsp salt
- 1 tsp black pepper
- 2 large eggs
- 1 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
- 2 tbsp olive oil
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1 cup chicken broth
- 1 cup grated mozzarella cheese
- 1 tbsp fresh parsley, chopped
Instructions
- Preheat your oven to 375°F (190°C).
- Season the chicken breasts generously with salt and pepper.
- Dredge each chicken piece in flour, then dip them in beaten eggs, and finally coat with breadcrumbs mixed with Parmesan cheese.
- Heat 2 tablespoons of olive oil in a skillet over medium heat.
- Place the chicken breasts in the hot skillet, cooking for 4-5 minutes on each side.
- Remove the chicken from the skillet and allow it to rest.
- Add minced garlic to the same skillet and cook for 1-2 minutes.
- Pour in chicken broth and heavy cream, stirring to create a sauce.
- Return the chicken to the skillet and cover it with mozzarella cheese.
- Cover the skillet and let it simmer for 2-3 minutes until the cheese melts.
- Garnish with chopped parsley before serving warm.
Notes
Use panko breadcrumbs for extra crunch. Always ensure chicken is at room temperature for even cooking.
