Ingredients

  • 4 boneless, skinless chicken breasts, cooked and shredded
  • 3 cups fresh spinach, chopped
  • 1 cup cooked rice (white or brown)
  • ½ cup onion, diced
  • 2 cloves garlic, minced
  • ½ cup cream cheese, softened
  • 1 cup heavy cream
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • ½ cup breadcrumbs
  • 2 tablespoons butter, melted
  • ¼ cup grated Parmesan cheese for topping

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  2. Add a tablespoon of olive oil to a large skillet over medium heat. Toss in the diced onion and minced garlic. Sauté for 2-3 minutes until fragrant and softened.
  3. Add the chopped spinach to the skillet and cook for another 2-3 minutes until wilted. Remove from heat.
  4. Combine the cooked chicken, cooked rice, cream cheese, heavy cream, mozzarella, Parmesan cheese, dried basil, oregano, and a sprinkle of salt and pepper in a large mixing bowl.
  5. Stir in the sautéed spinach mixture to blend all flavors.
  6. Transfer this mixture into the prepared baking dish, spreading it evenly.
  7. Mix the breadcrumbs, melted butter, and grated Parmesan cheese in a small bowl, then sprinkle this topping over the casserole.
  8. Bake for 25-30 minutes or until golden brown and bubbling.
  9. Remove from the oven and allow it to cool for 5 minutes before serving.

Notes

For extra crispiness, double the breadcrumb topping. Feel free to experiment with spices to customize your dish.
