A delightful casserole combining tender broccoli and cauliflower coated in a rich and creamy cheese sauce, topped with gooey melted cheese and a crunchy breadcrumb layer.

- 4 to 4.5 cups broccoli florets
- 4 to 4.5 cups cauliflower florets
- 1/3 cup unsalted butter, divided
- 1/3 cup all-purpose flour
- 2 cups whole milk
- 1 teaspoon garlic powder
- 3/4 teaspoon salt, or to taste
- 1/2 teaspoon onion powder
- 1/2 teaspoon freshly ground black pepper
- 1/4 teaspoon ground nutmeg
- 6 ounces shredded mixed cheese (mozzarella, provolone, Parmesan, Asiago, cheddar)
- 2 to 3 tablespoons unseasoned panko bread crumbs
- Chopped chives or green onion, for garnish (optional)
Instructions
- Preheat your oven to 400°F (200°C) to ensure it’s hot enough to create a bubbly crust.
- Steam the broccoli and cauliflower florets for about 6-8 minutes until tender-crisp in a steamer basket over boiling water.
- Melt 1/4 cup of the unsalted butter in a medium saucepan over medium heat.
- Make the roux by whisking in the flour and cooking for about 1-2 minutes until light golden.
- Add the 2 cups of whole milk gradually, stirring continuously until the sauce thickens.
- Flavor the sauce with garlic powder, salt, onion powder, black pepper, and nutmeg.
- Melt 1/2 cup of the shredded cheese into the sauce until completely melted.
- Combine the steamed broccoli and cauliflower with the cheese sauce in a mixing bowl, mixing well.
- Transfer the mixture to a greased baking dish, spreading it evenly.
- Top with the remaining cheese and panko breadcrumbs.
- Bake in the preheated oven for 35-40 minutes until bubbling and golden brown on top.
- Garnish with chopped chives or green onions if desired, and enjoy hot!
Notes
You can prepare the casserole ahead of time and refrigerate it, baking just before serving. Feel free to use your favorite cheeses or add other vegetables for variation.
