  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano

  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1 1/2 cups shredded mozzarella cheese
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large pot, cook the ground turkey sausage over medium heat until browned, breaking it apart as it cooks. Drain any excess fat.
  2. Add the chopped onion and minced garlic, sautéing for a few minutes until the onion becomes soft and fragrant.
  3. Pour in the chicken broth and bring it to a simmer.
  4. Add the crushed tomatoes, broken lasagna noodles, basil, oregano, red pepper flakes, salt, and pepper. Stir to combine and allow to cook for about 10-12 minutes, or until the noodles are tender.
  5. Mix in the heavy cream, ricotta, Parmesan, and mozzarella cheeses. Stir until the cheese has melted and the soup is rich and creamy.
  6. Taste the soup and adjust the seasoning with more salt, pepper, or red pepper flakes if necessary.
  7. Serve the soup in bowls, garnishing with fresh parsley.
