Instructions
- In a large pot, cook the ground turkey sausage over medium heat until browned, breaking it apart as it cooks. Drain any excess fat.
- Add the chopped onion and minced garlic, sautéing for a few minutes until the onion becomes soft and fragrant.
- Pour in the chicken broth and bring it to a simmer.
- Add the crushed tomatoes, broken lasagna noodles, basil, oregano, red pepper flakes, salt, and pepper. Stir to combine and allow to cook for about 10-12 minutes, or until the noodles are tender.
- Mix in the heavy cream, ricotta, Parmesan, and mozzarella cheeses. Stir until the cheese has melted and the soup is rich and creamy.
- Taste the soup and adjust the seasoning with more salt, pepper, or red pepper flakes if necessary.
- Serve the soup in bowls, garnishing with fresh parsley.
