Ingredients

  • 1 small onion, chopped

  • 4 cups chicken broth
  • 2 cups heavy cream

  • 8 oz lasagna noodles, broken into smaller pieces
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and pepper, to taste
  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1 1/2 cups shredded mozzarella cheese
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook the ground turkey sausage in a large pot over medium heat until browned, breaking it apart as it cooks.
  2. Drain any excess fat to avoid a greasy dish.
  3. Add the chopped onion and minced garlic, sautéing for a few minutes until the onion is soft and fragrant.
  4. Pour in the chicken broth and bring it to a simmer.
  5. Add the crushed tomatoes, broken lasagna noodles, basil, oregano, red pepper flakes, salt, and pepper. Stir to combine and cook for about 10-12 minutes.
  6. Mix in the heavy cream, ricotta, Parmesan, and mozzarella cheeses until melted.
  7. Taste the soup and adjust seasoning as necessary.
  8. Serve in bowls, garnished with fresh parsley.
