Instructions
- Prepare a heatproof bowl filled with chopped white chocolate and heavy cream over a pot of simmering water.
- Stir continuously until blended into a smooth mixture.
- Add the vanilla extract and stir to incorporate.
- Fold in the chopped cranberries and pistachios until evenly coated.
- Transfer the mixture to the refrigerator and chill for about 30 minutes.
- Scoop out portions and roll them into truffle-sized balls.
- Dust with powdered sugar optionally and refrigerate until serving.
