Ingredients

  • 1/2 cup shelled pistachios, chopped
  • 8 oz white chocolate, chopped
  • 1/4 cup heavy cream
  • 1/4 teaspoon vanilla extract
  • 1 tablespoon powdered sugar (optional)

Instructions

  1. Prepare a heatproof bowl filled with chopped white chocolate and heavy cream over a pot of simmering water.
  2. Stir continuously until blended into a smooth mixture.
  3. Add the vanilla extract and stir to incorporate.
  4. Fold in the chopped cranberries and pistachios until evenly coated.
  5. Transfer the mixture to the refrigerator and chill for about 30 minutes.
  6. Scoop out portions and roll them into truffle-sized balls.
  7. Dust with powdered sugar optionally and refrigerate until serving.
