- 8 oz cream cheese, softened
- 1 cup shredded sharp cheddar cheese
- 1/2 cup chopped pecans, plus additional for rolling
- 1/2 cup dried cranberries, chopped
- 1 tablespoon fresh parsley, chopped
- 1 tablespoon Dijon mustard
- 1 teaspoon garlic powder
- Salt and pepper to taste
- Crackers and apple slices for serving
Instructions
- Combine cream cheese and cheddar cheese in a mixing bowl.
- Add chopped pecans, cranberries, parsley, mustard, garlic powder, salt, and pepper; stir until well blended.
- Scoop the mixture and form it into a ball using your hands.
- Wrap in plastic wrap and refrigerate for at least 2 hours.
- Remove from the refrigerator and coat with additional chopped pecans.
- Serve with crackers and apple slices.
Notes
For variations, use low-fat cream cheese or different nuts based on preference.
