Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a muffin tin by greasing it or lining it with paper liners.
  2. Whisk together the cottage cheese, eggs, milk, and olive oil until smooth and well-combined.
  3. Mix the whole wheat flour, rolled oats, baking powder, baking soda, garlic powder, salt, and pepper in another bowl to create your dry ingredients.
  4. Incorporate the dry mixture into the wet ingredients, stirring gently until just combined.
  5. Fold in cheese and herbs if using, until evenly distributed.
  6. Scoop the batter into muffin cups, filling each about 3/4 full.
