Instructions
- Preheat your oven to 350°F (175°C) and prepare a muffin tin by greasing it or lining it with paper liners.
- Whisk together the cottage cheese, eggs, milk, and olive oil until smooth and well-combined.
- Mix the whole wheat flour, rolled oats, baking powder, baking soda, garlic powder, salt, and pepper in another bowl to create your dry ingredients.
- Incorporate the dry mixture into the wet ingredients, stirring gently until just combined.
- Fold in cheese and herbs if using, until evenly distributed.
- Scoop the batter into muffin cups, filling each about 3/4 full.
- Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted comes out clean.
- Let the muffins rest in the pan for 5 minutes before transferring to a wire rack to cool.
