- 1/2 cup shredded coconut
- 1/4 cup breadcrumbs
- 1/4 cup grated parmesan cheese
- 1 large egg
- 2 cloves garlic (minced)
- 1 tbsp ginger (grated)
- 1 tbsp coconut oil (melted)
- 1/2 tsp chili flakes (optional)
- Salt and pepper to taste
- 1/2 cup honey (for dipping)
Instructions
- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Combine the ground chicken with the shredded coconut, breadcrumbs, grated Parmesan, egg, minced garlic, grated ginger, and melted coconut oil in a large mixing bowl.
- Add chili flakes if desired, and season with salt and pepper to taste.
- Roll the mixture into 1-inch meatballs and place them on the prepared baking sheet.
- Bake in the preheated oven for 20-25 minutes, or until golden brown and fully cooked through.
- Serve with honey for dipping.
