Ingredients

  • 1/2 cup shredded coconut
  • 1/4 cup breadcrumbs
  • 1/4 cup grated parmesan cheese
  • 1 large egg
  • 2 cloves garlic (minced)
  • 1 tbsp ginger (grated)
  • 1 tbsp coconut oil (melted)
  • 1/2 tsp chili flakes (optional)
  • Salt and pepper to taste
  • 1/2 cup honey (for dipping)

Instructions

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Combine the ground chicken with the shredded coconut, breadcrumbs, grated Parmesan, egg, minced garlic, grated ginger, and melted coconut oil in a large mixing bowl.
  3. Add chili flakes if desired, and season with salt and pepper to taste.
  4. Roll the mixture into 1-inch meatballs and place them on the prepared baking sheet.
  5. Bake in the preheated oven for 20-25 minutes, or until golden brown and fully cooked through.
  6. Serve with honey for dipping.
