Ingredients

  • 3–4 lb chuck roast
  • Salt and black pepper
  • 2 tablespoons olive oil
  • 4 carrots, peeled and cut into chunks
  • 3 potatoes, peeled and cut into chunks
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 cups beef broth
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 2 bay leaves

Instructions

  1. Season the chuck roast generously with salt and black pepper.
  2. Heat the olive oil in a skillet over medium-high heat and sear the roast on all sides until golden brown.
  3. Add the cut carrots, potatoes, chopped onion, and minced garlic to the slow cooker.
  4. Place the seared roast on top of the vegetables.
  5. Whisk together the beef broth, tomato paste, Worcestershire sauce, dried thyme, and dried rosemary in a separate bowl.
  6. Pour the mixture over the roast and add the bay leaves.
  7. Cover the slow cooker and set it to cook on low for 480 minutes (8–9 hours) or high for 240 minutes (4–5 hours).
  8. Remove the bay leaves before serving.
