- 3–4 lb chuck roast
- Salt and black pepper
- 2 tablespoons olive oil
- 4 carrots, peeled and cut into chunks
- 3 potatoes, peeled and cut into chunks
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 cups beef broth
- 2 tablespoons tomato paste
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 2 bay leaves
Instructions
- Season the chuck roast generously with salt and black pepper.
- Heat the olive oil in a skillet over medium-high heat and sear the roast on all sides until golden brown.
- Add the cut carrots, potatoes, chopped onion, and minced garlic to the slow cooker.
- Place the seared roast on top of the vegetables.
- Whisk together the beef broth, tomato paste, Worcestershire sauce, dried thyme, and dried rosemary in a separate bowl.
- Pour the mixture over the roast and add the bay leaves.
- Cover the slow cooker and set it to cook on low for 480 minutes (8–9 hours) or high for 240 minutes (4–5 hours).
- Remove the bay leaves before serving.
Notes
Searing the roast enhances its flavor. Feel free to experiment with other vegetables and fresh herbs for added taste.
