Ingredients

  • 4 beef cube steaks
  • 1 cup all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 2 large eggs
  • 1/2 cup milk
  • Vegetable oil (for frying)
  • 1/4 cup pan drippings or butter
  • 1/4 cup all-purpose flour (for gravy)
  • 2 cups milk (for gravy)
  • Salt and pepper to taste (for gravy)

Instructions

  1. Combine the flour, salt, black pepper, paprika, garlic powder, and onion powder in a shallow dish.
  2. Whisk together the eggs and milk in another shallow dish.
  3. Dredge each cube steak in the flour mixture, dip it into the egg mixture, and return to the flour for a final coating.
  4. Heat about 1/4 inch of vegetable oil in a skillet over medium-high heat.
  5. Carefully add the steaks in batches, frying for 3-4 minutes per side until golden brown.
  6. Remove the steaks and drain them on a paper towel-lined plate.
  7. Use the pan drippings or melt butter in the skillet, whisk in 1/4 cup flour to form a roux.
  8. Gradually whisk in 2 cups of milk, simmering until thickened for about 5-7 minutes.
  9. Season with salt and pepper to taste, then serve hot, pouring gravy over the fried steak.
