Description

Delightful bread combining the sweet and tangy flavors of fresh rhubarb with warm, fragrant cinnamon.


Ingredients

  • 1 1/3 cups sugar, divided
  • 2 teaspoons ground cinnamon
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 large egg
  • 1 cup milk
  • 1/3 cup vegetable oil
  • 1 cup large diced rhubarb

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a loaf pan with nonstick baking spray, lining it with parchment paper.
  3. Mix together 1/3 cup of sugar and 2 teaspoons of ground cinnamon in a small bowl.
  4. Whisk together flour, baking powder, salt, and the remaining 1 cup of sugar in a larger bowl.
  5. Combine the egg, milk, and vegetable oil in another bowl, whisking until smooth.
  6. Stir the egg mixture into the flour mixture until just moistened.
  7. Fold in the diced rhubarb.
  8. Pour half of the batter into the prepared loaf pan.
  9. Sprinkle half of the reserved cinnamon sugar over this layer.
  10. Top with the remaining batter and sprinkle with the rest of the cinnamon-sugar mixture.
  11. Swirl gently with an offset spatula.
  12. Bake for about 60 minutes or until a toothpick comes out clean.
  13. Cool in the pan for 10 minutes, then turn out onto a wire rack to cool completely.

Notes

Consider folding in chopped nuts for added crunch or substituting some of the oil with unsweetened applesauce for a lower-fat option.
