A decadent dessert that beautifully combines rich chocolate and creamy peanut butter in a delightful rolled cake.


Ingredients

  • 1 cup granulated sugar
  • 1/2 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 cup creamy peanut butter
  • 1/2 cup powdered sugar
  • 1/2 cup unsalted butter, softened
  • 1 teaspoon vanilla extract (for the filling)
  • 12 tablespoons milk (to adjust consistency)
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup heavy cream

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare your 15×10 inch jelly roll pan by lining it with parchment paper and lightly greasing it.
  2. Beat the eggs and granulated sugar together until thick and pale.
  3. Add the vanilla extract and mix gently.
  4. Whisk together the flour, cocoa powder, baking powder, and salt in a separate bowl.
  5. Fold the dry ingredients into the egg mixture using a spatula until just combined.
  6. Spread the batter evenly into the prepared pan.
  7. Bake for 12-15 minutes or until a toothpick comes out clean.
  8. Remove from the oven and allow to cool for a few minutes, then invert the cake onto a powdered sugar-sprinkled towel and roll it up.
  9. Let it cool completely in this rolled shape.
  10. Prepare the peanut butter filling by beating together the peanut butter, powdered sugar, unsalted butter, vanilla, and milk until smooth.
  11. Unroll the cooled cake and spread the peanut butter filling evenly over the surface.
  12. Roll the cake back up, seam-side down.
  13. Heat the heavy cream until simmering and stir in the chocolate chips until melted into a ganache.
  14. Drizzle the ganache over the roulade and slice to serve.

Ensure room temperature eggs are used for better incorporation and avoid overmixing the batter.
