Description

A delightful dessert featuring layers of chocolate chip ice cream, vanilla ice cream, and sweet cookie dough.


Ingredients

  • 1/2 cup unsalted butter, softened
  • 1/4 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 tsp vanilla extract
  • 1 cup all-purpose flour
  • 1/2 tsp salt
  • 1/2 cup mini chocolate chips
  • 1 quart chocolate chip ice cream, softened
  • 1 quart vanilla ice cream, softened
  • 1 cup heavy whipping cream
  • 1/4 cup powdered sugar
  • 1/4 cup mini chocolate chips (for garnish)
  • Chocolate syrup (for garnish)

Instructions

  1. Cream together the softened butter, brown sugar, granulated sugar, and vanilla extract until smooth and fluffy.
  2. Mix in the flour and salt until combined to form a cookie dough.
  3. Add the mini chocolate chips and set the mixture aside.
  4. Line a 9-inch springform pan with parchment paper or plastic wrap.
  5. Spread half of the softened chocolate chip ice cream evenly across the bottom of the pan and freeze for 30 minutes.
  6. Remove from the freezer and spread half of the softened vanilla ice cream on top, then freeze for another 30 minutes.
  7. Crumble the cookie dough evenly over the vanilla ice cream and freeze for another 30 minutes.
  8. Spread the remaining chocolate chip ice cream on top of the cookie dough, followed by the final layer of vanilla ice cream.
  9. Freeze the cake for at least 4 hours or overnight for best results.
  10. Beat the heavy whipping cream, powdered sugar, and vanilla extract until stiff peaks form and cover the cake with this whipped topping.
  11. Garnish with mini chocolate chips and drizzle chocolate syrup on top before slicing and serving.

Notes

Use softened ice cream for easy layering, and allow adequate freezing time between layers for best texture.
