A vibrant and satisfying burrito filled with grilled chicken, chipotle ranch dressing, veggies, and cheese for a quick and delicious meal.


Ingredients

  • 2 grilled chicken breasts, chopped
  • 1/4 cup chipotle ranch dressing
  • 1 cup cooked rice
  • 1/2 cup black beans
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup diced tomatoes
  • 1/4 cup chopped lettuce
  • 1/4 cup corn (optional)
  • 2 large flour tortillas

Instructions

  1. Warm the flour tortillas in a skillet over medium heat for about 30 seconds on each side or microwave for about 20 seconds.
  2. Combine the chopped grilled chicken with the chipotle ranch dressing in a mixing bowl.
  3. Lay the warmed tortillas flat on a clean surface.
  4. Spoon a generous portion of cooked rice into the center of each tortilla.
  5. Layer in the black beans, chipotle ranch-coated chicken, shredded cheddar cheese, diced tomatoes, and optional corn and lettuce according to your preferences.
  6. Roll up the tortillas tightly, tucking in the sides as you go.
  7. Grill the rolled burritos seam side down on a heated skillet for about 3-4 minutes on each side until golden brown.
  8. Slice the burritos in half and serve them hot.

Notes

For extra flavor, marinate the chicken beforehand or add more vegetables like bell peppers or avocado.
