Ingredients

  • 2 cups cooked chicken, shredded
  • 2 cups fresh spinach, chopped
  • 8 oz cream cheese, softened
  • 1 cup shredded mozzarella cheese
  • 1 cup sour cream
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste
  • 1 cup breadcrumbs (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the shredded chicken and chopped spinach in a large mixing bowl.
  3. Add the softened cream cheese and sour cream, then mix in the garlic powder and onion powder, followed by salt and pepper. Stir until well combined.
  4. Pour the mixture into a greased casserole dish, spreading it evenly.
  5. Top the mixture with shredded mozzarella cheese and, if desired, sprinkle breadcrumbs on top.
  6. Place the casserole in the preheated oven and bake for about 25-30 minutes.
  7. Remove it from the oven once bubbly and golden. Let it cool for a few minutes before serving.

For a healthier version, consider using whole grain breadcrumbs or Greek yogurt instead of cream cheese.
