Ingredients

  • 1.5 to 2 cups cooked chicken, shredded or diced
  • 4 large flour tortillas (10- to 12-inch)
  • 1/2 cup ranch dressing
  • 1 cup shredded cheese (e.g., Cheddar, Colby Jack)
  • 2 cups shredded lettuce (e.g., Romaine, iceberg)
  • 12 Roma tomatoes, diced or 1 cup halved cherry tomatoes
  • Optional: bacon bits, diced avocado, sliced red onion, sliced bell peppers, corn, black beans

Instructions

  1. In a medium bowl, combine cooked chicken and ranch dressing until evenly coated.
  2. Warm the tortillas in a skillet or microwave for pliability.
  3. Place a tortilla flat and add a handful of shredded lettuce.
  4. Spoon one-quarter of the chicken mixture over the lettuce.
  5. Top with diced tomatoes, cheese, and any optional ingredients.
  6. Fold the sides of the tortilla inwards, then roll tightly from the bottom to the top.
  7. Slice in half if desired and serve.
